Passion Fruit Pina Colada Popsicles with Chia Seeds

Ingredients
- 110 g coconut milk
- 25 g Chia Seeds
- 5 g pure vanilla extract
- 15 g + 25 g maple syrup (or to taste)
- 255 g fresh pineapple
- 105 g coconut cream
- 10 g Marigold Passion Fruit Supercolor Powder & Seeds from Suncore Foods®
- Optional - 5 g CerisePrickly Pear Supercolor Powder from Suncore Foods®
Instructions
- Chia mixture - combine coconut milk, chia seeds, vanilla extract and 15 g maple syrup. Set aside for 15 minutes until chia seeds activate.
- Passion Fruit mixture - Place all remaining ingredients, except Cerise Prickly Pear Supercolor Powder, in a blender and blend until creamy and well combined. If using Cerise Prickly Pear follow the next step. If not using, jump to step 4.
- Cerise Prickly Pear mixture, if using - Remove half the mixture from the blender and set aside. Add Cerise Prickly Pear Supercolor to the remaining mixture in the blender and blend until well combined. Add equal amounts of each mixture to popsicle molds and freeze overnight.
- Assemble Popsicles - Add both mixtures to the popsicle molds, filling 30-40% of the mold with the chia mixture and the remaining with the passion fruit mixture. Freeze overnight.
