Butter Garlic Matcha Christmas Tree Dinner Rolls

Ingredients

300g warm oat milk

35g sugar

5g active dry yeast

27g olive oil

480g bread flour

6g salt

Optional - 7 g Matcha

Garlic Butter:

55g butter, at room temperature or melted

4 garlic cloves, finely chopped

4g (1/2 tsp) salt

 

Optional:

Cinnamon stick(s), used for the decorative tree trunk

Fresh herbs of choice to serve

Equipment Needed

Stand mixer with a dough hook attachment

Large baking tray

Instructions
  1. Prepare dough: In the bowl of a stand mixer, combine warm oat milk, sugar and yeast and set aside until the mixture is frothy. Mix in olive oil on low speed for 15-20 seconds. Mix in bread flour, salt and Matcha powder on low speed (or at the mixer recommended speed for dough) until the dough comes together and is no longer sticking to the walls of the bowl.
  2. 1st proof: Form a dough ball and place the dough in a clean bowl, cover and proof for 60-90 minutes.
  3. Roll dough: Punch the air out of dough and lightly re-knead the dough for a few seconds. Cut the dough into 15 equal portions and form dough ball with each portion.
  4. Assemble Christmas Tree: Prepare a large baking tray and place the buns in a Christmas Tree formation on the tray leaving 1/8” of room between each dough ball.
  5. 2nd proof: Cover with a kitchen towel and set aside for 60 minutes.
  6. Garlic Butter: Whisk or blend all ingredients until well combined. Once the buns have risen, brush a generous amount of garlic butter onto the dough, ensuring you get the crevices.
  7. Bake: Preheat oven to 3500 F and bake for 25 - 30 minutes. Oven temperatures vary, when ready, the top of the buns should be golden-brown and should sound hollow when you tap on them.
  8. Cool: Allow the buns to cool on the tray for 10 minutes. Transfer the buns to a wired rack and serve warm or allow the buns to cool to room temperature.
  9. Optional: For an extra garlic kick, if you have any garlic butter left, brush some more melted garlic butter onto the prepared dinner rolls while they're still warm.
    1. Serve: When ready to serve, insert 1-2 cinnamon sticks at the bottom of the tree as the tree branches and sprinkle fresh herb(s) of choice.
